
Green pie: quick and easy asparagus and broccolini pie
An asparagus and broccolini pie is excellent as lunch and a weekend treat for guests. Strong cheese, lemon and garlic complement the fresh vegetables nicely.
You cannot fail with this recipe! Puff pastry makes this pie an easy lunch or snack.
Ingredients for one pie:
600 g puff pastry
1 egg
2 tbsp seeds
2 cloves of garlic
fresh thyme
100 g strong cheese (e.g. cheddar) grated
200 g crème fraîche
salt and black pepper
450 g asparagus
150 g broccolini
flake salt
rocket shoots or rocket
lemon slices
Prepare the base first:
Defrost the puff pastry and roll it thinner. Form the edges, about 2 cm, by pressing gently with a knife or a dough wheel. Brush the edges with egg and sprinkle on the seeds.
And then the filling:
Peel and chop the garlic cloves and chop the thyme. Mix the garlic, thyme and grated cheese with the crème fraîche and add salt and black pepper. Spread the filling in the base, all the way to the edges.
Add the greenery:
Cut off the tough asparagus ends and peel them if necessary. Place the asparagus and broccolinis on the base and sprinkle some olive oil on top. Bake the pie in 200 degrees for 25 minutes.
Add the finishing touches:
Add some flake salt, rocket shoots or rocket, and lemon slices that each person can squeeze on the pie.
